Apples are one of the most popular fruits around the world. They are packed with vitamins, fiber, and antioxidants that support overall health. However, there's a small part of the apple that often raises concern-its seeds. While many people eat them without a second thought, there is a scientific reason why consuming apple seeds may not be entirely safe.

Apple seeds contain a compound called amygdalin, which belongs to a group of naturally occurring chemicals known as cyanogenic glycosides. When chewed and digested, amygdalin can be converted by the body into hydrogen cyanide, a highly toxic substance that interferes with the body's ability to use oxygen.
Hydrogen cyanide is dangerous in high doses and can be lethal. It works by binding to iron in cells, disrupting the function of enzymes that produce energy. As a result, cells suffocate and die. Symptoms of cyanide poisoning include headache, dizziness, confusion, difficulty breathing, and in severe cases, seizures, coma, or death.
The good news is that swallowing a few apple seeds whole is unlikely to cause any harm because the tough seed coating protects the amygdalin from being released and digested. However, chewing the seeds breaks down that protective layer and increases the risk of cyanide release.
The actual amount of amygdalin in apple seeds varies depending on the type of apple, how fresh the seeds are, and how they're consumed. On average, it would take a large number of thoroughly chewed seeds-likely from several apples-to reach a dangerous level of cyanide for an adult. For children or pets, the risk is higher due to their smaller body size and lower tolerance to toxins.
Ingesting small quantities by accident or occasionally is not likely to result in serious health issues for most healthy adults. Nevertheless, it is wise to avoid eating the seeds deliberately or in large amounts. This caution is especially important when preparing food for children or making apple-based products like smoothies, where seeds may be crushed.
Interestingly, the body has some ability to detoxify small amounts of cyanide. The liver can convert cyanide into a less harmful compound called thiocyanate, which is then excreted in the urine. However, this natural defense has limits and cannot cope with high doses.
From a historical perspective, cyanide has been used as a poison throughout history and even occurs in other seeds and pits, such as those from cherries, peaches, apricots, and bitter almonds. The presence of cyanide-producing compounds in plants is believed to be a natural defense mechanism to deter animals from eating them.
In terms of nutrition, there is no significant benefit to consuming apple seeds. Any trace nutrients they might contain are outweighed by the potential risk. Therefore, it is best to remove the seeds before eating apples or using them in recipes.
