How Can You Tell If an Egg Is Fresh and How Old It Really Is?

If you've ever cracked open an egg and hesitated, wondering if it's still good, you're not alone. Eggs are a staple in most households, but their freshness can be tricky to determine without clear visual or smell cues. Fortunately, there are several simple and surprisingly accurate ways to test an egg's freshness and even estimate how many days old it might be.

One of the most popular methods is the water float test. Fill a bowl or glass with cold water and gently place the egg inside. A very fresh egg will sink to the bottom and lay flat on its side. This is because the air cell inside the egg is still small. As the egg ages, air seeps in through the shell, enlarging the air cell. If the egg stands upright on the bottom, it's still safe to eat but is about one to two weeks old. If it floats to the surface, the egg is likely three weeks old or more and should not be consumed.

The sniff test is also a reliable indicator. A bad egg will emit a strong, unmistakable sulfur-like odor. This test works even if the egg looks fine from the outside. Always crack the egg into a separate bowl before using it in a recipe to avoid ruining your dish with a spoiled one.

The candling method, used commercially but also possible at home, involves shining a bright light through the egg in a dark room. This lets you observe the size of the air cell and the position of the yolk. Fresh eggs have a centered yolk and a small air pocket, while older eggs show a larger air cell and more mobility inside.

Another trick involves observing how the egg behaves once cracked open. A fresh egg will have a firm, domed yolk and thick egg white that doesn't spread much. An older egg will have a flatter yolk and runny whites that spread widely across the pan or bowl.

If your eggs are store-bought, you can also decode the Julian date printed on the carton. This three-digit number represents the day of the year the eggs were packed. For example, "001" stands for January 1st and "365" for December 31st. Eggs are generally safe to eat for 3-5 weeks after the pack date if refrigerated properly.

Refrigeration plays a key role in preserving egg freshness. Eggs stored in the coldest part of the fridge (not the door) can last significantly longer than those kept at room temperature. In some countries, like the U.S., eggs are washed and must be refrigerated. In others, like many parts of Europe, eggs are often unwashed and can be stored at room temperature for shorter periods.

Fun fact: Eggs naturally have a protective coating called the "bloom" or cuticle, which helps keep bacteria out. Washing eggs removes this barrier, which is why refrigeration becomes essential.

Remember: even if an egg passes the float test, always use your senses-sight, smell, and touch-before eating. And when in doubt, throw it out.

With these tips, you'll never have to second-guess your eggs again. It's all about combining a few easy tests with a little knowledge, and you can be confident about what's fresh, what's edible, and what belongs in the bin.
