Why Does Hot Water Freeze Faster Than Cold Water?

The phenomenon where hot water freezes faster than cold water is known as the Mpemba effect, named after Erasto Mpemba, a Tanzanian student who observed it in the 1960s. At first glance, it seems to contradict basic logic and thermodynamics. After all, wouldn't colder water already be closer to freezing, and therefore freeze sooner? However, under certain conditions, hot water can indeed freeze more quickly than cooler water.

There are several hypotheses that may explain this effect, and it is likely that more than one factor plays a role. One idea involves evaporation. Hot water evaporates more rapidly, which reduces the volume of water that needs to freeze. Less water means a faster freezing process. Another possible explanation involves convection. Hot water may set up more vigorous convection currents, which help cool the water more evenly and quickly.

Supercooling is also an important factor. Cold water may remain in a liquid state even when its temperature drops below 0°C due to lack of impurities or disturbances, delaying freezing. Hot water, having fewer dissolved gases and being more disturbed from heating, might bypass supercooling and begin freezing earlier.

Additionally, the structure of hydrogen bonds in water changes when heated. Heating may temporarily break some hydrogen bonds, allowing the water molecules to re-align in a way that could facilitate faster crystallization under the right conditions.

Despite decades of investigation, the Mpemba effect remains somewhat mysterious and is still being studied. It does not occur in every situation, and reproducing it consistently can be difficult. Yet, it stands as a fascinating example of how common substances like water can still surprise us, reminding us that even simple questions can have complex answers.
